These Greek Bowls are the perfect bowls to meal prep to make a healthy, nutritious lunch to make on those busy weeks when you don't have time to cook.

Make the turmeric rice 0 Put a medium pot over medium heat and add olive oil. Once warm, add diced onion and cook 4-5 minutes to soften. 2 Stir in turmeric powder, curry powder and salt and cook for 1 minute, stirring frequently. 3 Stir in the rice and stir frequently, until the rice is evenly coated, about 1 minute. 4 Stir in the broth and bring to a simmer over medium high heat. Turn to low heat and cook until the rice is tender and the liquid is absorbed, about 15-18 minutes. Remove from the heat, fluff with a fork and put the lid on for 10 minutes. After 10 minutes, remove the lid and fluff with a fork and set aside. Make the meatballs 6 Preheat the oven to 400 F and line a baking sheet with parchment paper. 7 Make the meatballs: Mix together the ground beef, salt, pepper, pressed garlic, dried oregano, egg, grated onion, breadcrumb and olive oil. Once combined, scoop about 2-3 tbsp at a time and form into meatballs. You'll have about 20-22 meatballs. Place the meatballs onto the sheet pan and cook for 24-26 minutes or until the meatballs are cooked through.
