0 Slice the potatoes super thin with a knife or on a mandolin if you have one - about 1/16 inches. 1 In a large bowl add all the potato slices and fill with cold water, even adding some ice cubes to keep the water cold. Let soak for 30 minutes. 2 Drain the potatoes and pat the potatoes as dry as you can get them. 3 Add the dried potatoes to a dry bowl and season with olive oil. Toss to coat, ensuring all of the slices are seasoned. 5 Set air fryer to 350F. Cook in batches and make sure you only have about one layer at a time of potatoes in the bottom of the basket, it's ok if the potatoes are overlapping. Air fry for 12-15 minutes, flipping halfway through. Repeat with potatoes until they're all cooked. 6 Once all chips are cooked, season with garlic powder, onion powder, dried oregano, salt, pepper and toss gently.
