-1 Preheat the oven to 350F and line an 8X8 baking sheet with parchment. Set aside. -1 To a large mixing bowl, add the butter, sugar, and vanilla. Using a wooden spoon or hand mixer combine the ingredients till completely smooth and silky. Add in the vegan egg. To the same mixing bowl, add the oats, the flour, baking soda, baking powder, and salt. Stir till combined. Set aside. -1 To a small pot, add all the fudge ingredients and heat on low heat till combined. Whisk occasionally to avoid burning. -1 To the 8X8 pan, add half your oat mixture and flatten. Pour over the fudge mixture evenly and crumble with the other half of the oat mixture. -1 Bake for 25-30 minutes. You don't want to overbake so your fudge is still nice and soft once cooled.View original recipe
