Greek Style Vegetarian Pasta Recipe

This vegetarian pasta recipe is incredibly easy to make and inspired by my love for everything Greek. The perfect comfort food!

What you need

⅔ tbsp olive oil

7 ⅕ oz spaghetti

⅔ red onion

⅔ fresh parsley

1 ⅓ cup zucchini

⅓ cup kale

⅔ tomato

¼ cup cherry tomato

¼ cup marinated artichokes

¼ cup sundried tomatoes

2 fresh garlic

¼ cup parmesan cheese

⅔ tbsp vegetable bouillon

1 ⅓ tbsp nutritional yeast

⅓ tsp salt

⅓ tsp fresh ground black pepper

⅓ tsp red chili flakes

⅔ lite coconut milk

2 water

2 tbsp lemon juice

-1 Into a wide, deep pot add all your ingredients apart from your lemon juice.
-1 Bring your pot to a boil then simmer on low for around 30 minutes with the lid on.
-1 As your pasta cooks keep an eye on it, gradually add extra water if needed to ensure proper cooking and to avoid burning.
-1 Before serving, hit it with some lemon and more spinach or kale!
