-1 Add the cashews to a small bowl and cover completely with hot water. -1 Allow sitting for 15 – 20 minutes, drain + rinse. -1 Transfer the cashews and ALL of the remaining ingredients to a blender. -1 Blend on high speed until smooth. Add more hot water to reach desired “queso-like” consistency. -1 Transfer to a serving bowl or dish and add jalapeno slices, sundried tomatoes, and chopped cilantro on top. -1 Serve warm with prepared fresh veggies and tortilla chips!
