Whipped Feta Dip with Roasted Cauliflower

This creamy, flavorful whipped feta dip is a gift from above! It's vegetarian, and delicious. Add the walnut crumble on top or get creative. This recipe is totally versatile.

-1 Preheat the oven to 375F and line a baking sheet with parchment paper. -1 Cut the half-head of cauliflower into medium to small-sized pieces. -1 Transfer the cauliflower onto the baking sheet. Evenly coat with olive oil, salt, pepper, garlic powder, and onion powder. -1 Bake for 20 – 30 minutes, until cooked through and golden. -1 Allow the cauliflower to cool before using. -1 In a medium-sized bowl, add the feta cheese, and break it into small pieces using a fork. -1 Add the Greek yogurt, lemon juice, and lemon zest. Using a hand mixer, whip the feta mixture until smooth and light. -1 Cover with plastic wrap and set aside in the fridge. -1 As that sits, prepare the chopped parsley. -1 In a medium-sized serving dish, thickly spread on the whipped feta. -1 Drizzle olive oil over the top of the dish to the desired amount. -1 Arrange the roasted cauliflower around the entire dish, garnish with parsley and the optional toasted walnut crumble. -1 Serve immediately with pita bread, toasted sourdough, or tortilla chips.View original recipe
