This is one of the easiest whipped feta recipes and it's perfectly paired with peaches for a summer burst of sweetness and added health benefits.

1 Make the whipped feta by adding the feta cheese, feta brine, lemon juice, olive oil and lemon zest to a food processor and pulse until smooth and light. 0 Make the peaches by adding a drizzle of olive oil to a pan and turning to medium heat; add the peaches and cook for 5-8 minutes until the peaches start to break down and turn into more of a jammy texture. Remove from the pan to a bowl and set aside to cool. (Alternatively, you could saute the peaches for just 1-2 minutes and then set aside in a bowl to cool). 2 To make the hot honey, in a small bowl mix together the liquid honey, chili flakes and hot sauce. Taste and adjust by adding more chili flakes or hot sauce for a spicier honey. 3 Once the peaches have cooled, assemble the dip by layering the whipped feta on a plate or in a low bowl. Next layer the peaches followed by tomatoes, pistachios and drizzle with desired amount of hot honey. Serve with fresh or toasted pitas.View original recipe
