Whole Roasted Chicken

This Whole Roasted Chicken is a comforting meal to make for the whole family. The best part is how far this meal can go. Use the leftover chicken in so many different ways to get the most out of this meal.

What you need

⅕ cup olive oil

4 potato

1 lemon

3 fresh garlic

1 ½ tsp salt

1 tsp pepper

1 tbsp dried oregano

1 tbsp mustard

½ cup water

½ cooked chicken

0 Preheat the oven to 375F.
1 To a large baking dish add the potatoes and all of the potato seasonings. Toss to combine. Add 1 cup of water to the baking dish with the potatoes.
2 Add the whole chicken on top of the potatoes. Massage the chicken all over with the chicken seasonings. 
3 Cover with foil and roast at 375F for one hour, remove the foil and roast for another 45 minutes uncovered. Allow chicken to rest for 15-20 minutes before carving and serving with potatoes.
