Apple Caprese Sandwich

    This unique twist to a caprese salad that you'll love. This caprese sandwich combines everything you love about the Italian salad but adds the sweetness and crunch of apples.

    1. Drizzle olive oil or spread butter on each piece of ciabatta bread. On medium heat in a large frying pan, toast the 4 slices of bread until golden. Remove the bread from the heat and rub each slice with a garlic clove half to impart some garlic flavour. Set aside.

    2. To make one sandwich, layer 4-5 apple slices on the bottom layer of the bread, followed by 3-4 tomato slices with a sprinkle of salt and pepper. Then, layer 2-3 mozzarella slices and drizzle the balsamic glaze over the cheese. Finally, finish by adding a handful of basil and top with a final piece of ciabatta bread. Repeat to make the second sandwich.
