Crispy Chickpeas with Whipped Yogurt and Rice

Easy, crispy chickpeas are so quick to bake up or put in the Airfryer. In this recipe I served them with a healthy rice, and creamy whipped yogurt.

Preheat the oven to 425F and line a baking sheet with parchment paper.
To a large bowl, combine the chickpea ingredients and stir well until every chickpea is well coated.
Transfer the uncooked, dressed chickpeas to the lined baking sheet and cook for 25 minutes, stirring and checking often to avoid burning.
While the chickpeas cook, prepare the @RightRice as per package instructions.
To make the whipped yogurt, add all of the ingredients to a deep bowl, and stir until well combined.
Once the chickpeas are cooked and ready, you can begin portioning the @RightRice into bowls (serves 2), then add the whipped yoghurt, chickpeas, and any additional toppings as desired.
