Quinoa and Spinach Patties

    These quinoa and spinach patties are healthy, great for meal prep, and the whole family will love them.

    For the patties:

    For the Lemon Garlic Aioli:

    1. Preheat your oven to 400F and line a large baking sheet with parchment.

    2. To a large mixing bowl, combine all your ingredients apart from the avocado oil. Stir with a wooden spoon to well combine.  Using an ice scream scoop (around 2 tbsp.) begin moulding your patties.  First into balls then flatten to firm.

    3. Using a brush lightly grease the base of the parchment paper with the avocado oil.

    4. Place them on the baking sheet and bake for 20-23 minutes.  Flipping them halfway through.

    5. While the patties cook, make the Aioli by combining all the ingredients into a small bowl and stirring to combine.

    6. Once the patties are ready, enjoy immediately or as meal prep.  Serve with your desired amount of Lemon Garlic Aioli!
