This is an easy, fresh bruschette recipe that is perfect for a healthy, tasty snack or appetizer.

In a small bowl combine finely chopped tomatoes, chopped basil, minced garlic, olive oil, red wine vinegar, salt and pepper. Stir and let sit in the fridge to let the flavours meld together while you make the crostini.
Preheat the oven to 400F. Using a bread knife, slice the baguette into 1-inch thick slices. Brush the baguette slices with olive oil on one side and place in a single layer on a baking sheet. Toast for 10 minutes total, flipping halfway through. Use the cut side of a garlic clove and rub on the olive oil side of the crostini when you take them out of the oven.
Serve by topping each olive oil side of the crostini topped with bruschetta and a drizzle of balsamic glaze (optional). Conversley, you could serve the bruschetta with a spoon and crostini on the side so each person can create their own crostini.
