Cashew Chipotle Burrito Sauce

For the Chipotle Cashew Sauce

2 cup raw cashews soaked for at least 3 hours in water then strained and rinsed

½ cup filtered water

2 tbsp. olive oil

½ cup coconut cream solid form from a can

2 chipotle chile in adobo sauce

2 clove of garlic

season to taste

1 tsp cumin

dash of fresh lemon

2 tbsp. maple syrup

3 cup fresh tomatoes finely chopped, seeds removed

2 tbsp. olive oil

1 cup sweet white onion very finely chopped

4 cloves of garlic finely chopped

2 cup green pepper finely chopped

2 jalapeno seeds removed, finely chopped

Juice of half a lime

¾ cup fresh cilantro

season to taste

½ tsp-tbsp. cayenne pepper

2 tsp. hot sauce
