These Homemade Potato Chips are crispy, quick, and so delicious. Top them with Greek-style toppings or make them your own.

Slice the potatoes super thin with a knife or on a mandolin if you have one - about 1/16 inches.
In a large bowl add all the potato slices and fill with cold water, even adding some ice cubes to keep the water cold. Let soak for 30 minutes.
Drain the potatoes and pat the potatoes as dry as you can get them.
Add the dried potatoes to a dry bowl and season with olive oil. Toss to coat, ensuring all of the slices are seasoned.
Set air fryer to 350F. Cook in batches and make sure you only have about one layer at a time of potatoes in the bottom of the basket, it's ok if the potatoes are overlapping. Air fry for 12-15 minutes, flipping halfway through. Repeat with potatoes until they're all cooked.
Once all chips are cooked, season with garlic powder, onion powder, dried oregano, salt, pepper and toss gently. Top with crumbled feta and lemon zest (if desired).
