Spicy Cucumber Squash Salad

A new salad recipe, coming in hot. Quite literally, I’m bringing the heat with this new spicy cucumber salad recipe. Packed with delicious greens and paired with a homemade dressing, this recipe will be your new go-to with the perfect crunch in every bite – made in only ten minutes.

Add cucumber, zucchini and yellow squash slices to a strainer and add a big pinch or two of salt. Place over a bowl and let sit for 10 minutes (this helps get some of the water out of the vegetables before mixing the salad).
While the vegetables are sitting, make the dressing by adding all of the dressing ingredients together in a blender or food processor and blend until combined. Taste and adjust seasoning with more salt if desired.
After the vegetables have sat in the strainer with salt for 10 minutes, use your hands or a paper towel to gently squeeze / press on them to remove anymore excess water.
Then add the vegetables and pumpkin seeds to a bowl. Drizzle over the dressing and toss. Top the salad with slices from 1-2 avocados and sprinkle over the everything but the bagel seasoning.
