This vegan ceviche uses watermelon vs. raw fish to make a refreshing, vegan version of this delicious appy.

To roast the jalapenos, add to a pan over high heat it lightly sprayed with oil.
Cook and flip continuously until roasted on each side.
Cool slightly, remove the core & seeds, finely dice and set aside.
Prep & add everything to a large bowl, mix together, and season to taste.
Store in the fridge until ready to serve, the longer it sits the more amazing the flavour will become!
Serve with your favourite tortilla chips! Delicious!!
