This is such an easy queso sauce recipe that you'll want to dip everything in. Serve with veggies, pita, crackers, or nachos!

Add the cashews to a small bowl and cover completely with hot water.
Allow sitting for 15 – 20 minutes, drain + rinse.
Transfer the cashews and ALL of the remaining ingredients to a blender.
Blend on high speed until smooth. Add more hot water to reach desired “queso-like” consistency.
Transfer to a serving bowl or dish and add jalapeno slices, sundried tomatoes, and chopped cilantro on top.
Serve warm with prepared fresh veggies and tortilla chips! DELICIOUS!
